:: Bacon Wrapped Chicken ::

* 6 boneless, skinless chicken breasts
* 1 8 oz. carton of cream cheese (either chive & onion, *or make your own garlic & herb like I do*)
* bacon (2 slices per chicken breast)
* salt and pepper to taste

Directions

Preheat oven to 400 degrees and spray baking dish. Butterfly chicken breasts and season with salt and pepper. Spread 2 -3 tablespoons of cream cheese over each chicken piece. Roll up chicken and wrap with two strips of bacon. Place seam side down in baking dish. Bake for 35 minutes or until juices run clear. Broil six inches from heat for 3-5 minutes until bacon is crispy. ENJOY!

*If you would like to make your own garlic and herb cream cheese like I do, simply mince 3-4 garlic cloves and 2 Tbsp. freshly chopped basil leaves and mix into plain cream cheese.*
