* 3-4 boneless, skinless chicken breasts
* Olive Oil
* Salt and pepper
* 1 - 1 1/2 Cups fresh basil leaves, lightly packed
* 1/4 Cup lemon juice (or fresh juice from one large lemon)
* 1 tsp. lemon zest
* 1 garlic clove
* 1 tsp. salt
* 1/2 tsp. black pepper
* 1/4 - 1/3 Cup Olive Oil
Directions
Coat chicken lightly with olive oil and season with salt and pepper to your liking and grill until just cooked through, between 7-8 minutes per side.
Meanwhile, in blender or small Cuisinart blend basil, garlic, salt, pepper, lemon juice, and lemon zest together. Gradually blend in olive oil.*
*Please note: the dressing will taste VERY tart on it's own, however when drizzled over chicken, it is a perfect balance and is simply divine!
